The Nesmuk JANUS chef''s knife with a blade length of 140 mm is the small universal knife from our manufactory and is ideally suited for cutting or dicing vegetables. The blade is a little bit higher and gives a plus of security. The filigree knife handle with its functional ergonomics ensures perfect control. This makes it the perfect knife for all those who normally like to use small peeling knives. The blade is made of the patented niobium steel and therefore has an improved cutting ability and a very long service life. The DLC coating additionally protects the steel from acids and simplifies the care of the knife. The functional carbon coating has a surface hardness three times higher than that of steel. The blade has the one-sided hollow grinding typical of Nesmuk which reduces weight and cutting ability.

The DLC coating method was invented for the highest standards and is used in medicine spaceflight and racecar motors. The amorphous carbon coat a few micrometer thin is immune to acids bases extreme temperatures and similarly aggressive effects. Nesmuk uses an extremely hard deep black coating variant distinguished by low friction and high scratch resistance.
